  • Overview

    The hotel business functions seven days a week, 24 hours a day. All Team Members must realize this fact and be aware that at all times it may be necessary to move Team Members from their accustomed shift as business demands change. In addition, this is a hospitality business and a hospitable service atmosphere must be projected at all times.

     

     

    Responsibilities

    • Understand all the duties and responsibilities in kitchen.
    • Handle basic methods of food production.
    • Knowledge how to pre-prepare and prepare different ingredients and food components.
    • Processing various raw materials and ingredients.
    • Excellent knife skills.
    • Ability to work fast but maintain high standard.
    • Be able to control the quality and freshness of ingredients and of sushi.
    • Ability to work independently.
    • Experience on working in hectic environment and working under pressure.
    • Communication and co-operation skills.
    • Flexible and willing to adapt to changing situations.
    • The sushi cook job involves walking, standing for long periods, repetitive hand and arm movements, frequent heavy lifting, bending, and stretching along with continuous interaction with customers and co-workers in a fast paced environment.
    • Knowledge of and ability to prepare stocks, soups, mother sauces, all varieties of meat including veal, pork, beef, lamb, poultry, game and seafood; complete understanding of kitchen operations

    Qualifications

    • Working experience of making sushi 2 – 5 years, both machine made sushi and handmade sushi.
    • Education/studies in restaurant sector that include food preparation.
    • Studies and experience of food hygiene control.
    • Working experience in other than sushi restaurant is advantage.
    • Basic duties to cooks is making sushi, from start to presentation following the recipes
    • Fully Bilingual (English/Spanish)
